Ingredients
- 1 cup rolled oats
- 1/2 cup oat flour
- 1 scoop Goode Health Vanilla Spice Protein Powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup pistachio butter, (or nut butter of choice)
- 1 large ripe banana, or 2 small (mashed)
- 1 egg
- 1-2 tbsp raw honey
- 1 tsp vanilla extract
- 2 tbsp hemp seeds
- 1/4 cup walnuts, chopped
- 3 tbsp raisins
- 2 tbsp pumpkin seeds
- 2 tbsp chocolate chips
- 2 tbsp dates, chopped
Directions
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper.
- In a large bowl, mix dry ingredients: Rolled oats, oat flour, Goode Health powder, baking soda, cinnamon, salt, hemp seeds, walnuts, raisins, and pumpkin seeds.
- In a separate bowl, whisk wet ingredients: Mashed banana, egg, pistachio butter, maple syrup, and vanilla extract.
- Combine wet and dry mixtures until a sticky dough forms. Fold in any optional add-ins.
- Use a spoon or cookie scoop to form ~2 tbsp balls.
- Place on baking sheet and flatten slightly.
- Bake for 12–15 minutes, until edges are lightly golden and centers are set.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Store in the fridge for up to 1 week. Freeze for up to 2 months—great for grab-and-go!
