Tahini Yogurt Bowl with Seedy Granola

Ingredients for the granola

  • 2 scoops Vanilla Goode Health Superfood Blend
  • 2 ½ Cups of old-fashioned rolled oats
  • ½ cup millet
  • 1 cup raw shelled pumpkin seeds
  • 1 cup sesame seeds
  • 2 tablespoons chia seeds
  • ⅓ cup pure maple syrup
  • ¼ cup nut butter, warmed slightly
  • ¼ cup extra-virgin olive oil or coconut oil
  • 3 tablespoons aquafaba
  • ¼ teaspoon sea salt
    • Ingredients for the tahini yogurt

      • 2 cups unsweetened greek yogurt
      • ½ cup tahini
      • 3 tablespoons maple syrup

      Directions

      1. For the assembly: get 1 cup sliced fresh fruit (berries, pears, etc)
      2. For the granola: Place the millet in a heatproof bowl and pour 2 cups boiling water over top. Cover and let sit for 1 hour, then drain the water.
      3. Preheat the oven to 350 degrees F. In a large bowl, stir together the oats, pumpkin seeds, sesame seeds, chia seeds, and drained millet.
      4. In a small bowl, mix together the maple syrup, nut butter, oil, aquafaba, and salt.

      6. Combine the wet ingredients and the dry ingredients and mix well. Add the Vanilla Superfoods Blend and mix well.
      7. Spread the mixture in an even layer on a parchment-lined baking sheet and press down gently. Bake for 30 minutes, or until a dark golden brown on the edges.
      8. Remove from the oven and let cool.
      9. For the yogurt: Mix together the yogurt, tahini, and maple syrup until well-combined.
      10. To assemble: Place a layer of yogurt in the bottom of a glass, followed by a layer of sliced fruit, then a layer of granola. Repeat.
