Ingredients for the granola
- 2 scoops Vanilla Goode Health Superfood Blend
- 2 ½ Cups of old-fashioned rolled oats
- ½ cup millet
- 1 cup raw shelled pumpkin seeds
- 1 cup sesame seeds
- 2 tablespoons chia seeds
- ⅓ cup pure maple syrup
- ¼ cup nut butter, warmed slightly
- ¼ cup extra-virgin olive oil or coconut oil
- 3 tablespoons aquafaba
- ¼ teaspoon sea salt
Ingredients for the tahini yogurt
- 2 cups unsweetened greek yogurt
- ½ cup tahini
- 3 tablespoons maple syrup
Directions
- For the assembly: get
1 cup sliced fresh fruit (berries, pears, etc)
- For the granola: Place the millet in a heatproof bowl and pour 2 cups boiling water over top. Cover and let sit for 1 hour, then drain the water.
- Preheat the oven to 350 degrees F. In a large bowl, stir together the oats, pumpkin seeds, sesame seeds, chia seeds, and drained millet.
- In a small bowl, mix together the maple syrup, nut butter, oil, aquafaba, and salt.

- Combine the wet ingredients and the dry ingredients and mix well. Add the Vanilla Superfoods Blend and mix well.
- Spread the mixture in an even layer on a parchment-lined baking sheet and press down gently. Bake for 30 minutes, or until a dark golden brown on the edges.
- Remove from the oven and let cool.
- For the yogurt: Mix together the yogurt, tahini, and maple syrup until well-combined.
- To assemble: Place a layer of yogurt in the bottom of a glass, followed by a layer of sliced fruit, then a layer of granola. Repeat.
