Chocolate Cherry Almond Muffins
Ingredients
Makes 6 muffins:
- 1 ½ cups almond flour (or oat flour)
- 1 scoop Goode Health Moroccan Chocolate Superfood Blend
- ½ cup chopped almonds
- ½ cup dried cherries
- 2 large eggs
- ½ cup almond milk (or milk of choice)
- ¼ cup coconut oil, melted (or butter)
- ¼ cup maple syrup or honey
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix almond flour (or oat flour), Moroccan Chocolate Superfood Blend, baking powder, baking soda, and salt.
- In a separate bowl, whisk eggs, almond milk, melted coconut oil, maple syrup, and vanilla extract.
- Add wet ingredients to dry ingredients and stir until just combined.
- Fold in chopped almonds and dried cherries.
- Divide batter evenly into muffin tin.
- Bake 18-22 minutes, or until a toothpick comes out clean.
- Let muffins cool 5-10 minutes before serving. Optional: Top with extra chopped almonds or a drizzle of chocolate.
