Butternut Squash Soup

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion, chopped
  • ½ teaspoon sea salt
  • 1 (3-pound) butternut squash, peeled, seeded, and cubed
  • 4 garlic cloves, whole
  • 1 teaspoon grated fresh ginger
  • 4 cups broth of choice
  • 2 scoops Unsweetened Goode health protein powder
  • parmesan cheese for topping
  • Directions

    1. In a large pot, combine the olive oil, onion, salt, butternut, garlic and ginger. Cook over medium-high heat for 15 minutes, or until completely soft. In batches, add the vegetable/broth mix to a blender with a scoop of protein and puree until smooth. Serve with extra olive oil and a sprinkle of parmesan cheese.
