Butternut Squash Soup

- In a large pot, combine the olive oil, onion, salt, butternut, garlic and ginger. Cook over medium-high heat for 15 minutes, or until completely soft. In batches, add the vegetable/broth mix to a blender with a scoop of protein and puree until smooth. Serve with extra olive oil and a sprinkle of parmesan cheese.
