Ingredients
2 tablespoons extra-virgin olive oil
1 large yellow onion, chopped
½ teaspoon sea salt
1 (3-pound) butternut squash, peeled, seeded, and cubed
4 garlic cloves, whole
1 teaspoon grated fresh ginger
4 cups broth of choice
2 scoops Unsweetened Goode health protein powder
parmesan cheese for topping

In a large pot, combine the olive oil, onion, salt, butternut, garlic and ginger. Cook over medium-high heat for 15 minutes, or until completely soft. In batches, add the vegetable/broth mix to a blender with a scoop of protein and puree until smooth. Serve with extra olive oil and a sprinkle of parmesan cheese.
