Blueberry Banana Protein Pancakes
Makes: 2 servings (2 small pancakes or 1 large)
1 egg
1/4 cup Unsweetened Goode Health
1 Tbsp ground flax seed
1 banana
1 Tbsp plant-based milk (slowly add more if batter is too dry to mix)
1/4 cup oats
1 tsp cinnamon
1/4 cup blueberries
1½ tsp avocado oil
2 Tbsp maple syrup

- In a mixing bowl or blender, mix the egg, Goode Health, ground flax seed, banana, plant-based milk, cinnamon and oats.
- Stir blueberries into the batter.
- Heat the oil in a frying pan over medium-low heat. Pour in batter and cook pancakes until they're firm enough to flip, about 2 minutes per side.
- Serve topped with blueberries, maple syrup and sprinkle with cinnamon.
