Blueberry Banana Protein Pancakes

Makes: 2 servings (2 small pancakes or 1 large)

Ingredients

  • 1 egg
  • 1/4 cup Unsweetened Goode Health
  • 1 Tbsp ground flax seed
  • 1 banana
  • 1 Tbsp plant-based milk (slowly add more if batter is too dry to mix)
  • 1/4 cup oats
  • 1 tsp cinnamon
  • 1/4 cup blueberries
  • 1½ tsp avocado oil
  • 2 Tbsp maple syrup
  • Directions

    1. In a mixing bowl or blender, mix the egg, Goode Health, ground flax seed, banana, plant-based milk, cinnamon and oats.
    2. Stir blueberries into the batter.
    3. Heat the oil in a frying pan over medium-low heat. Pour in batter and cook pancakes until they're firm enough to flip, about 2 minutes per side.
    4. Serve topped with blueberries, maple syrup and sprinkle with cinnamon.
