
Blueberry Banana Protein Pancakes
Makes: 2 servings (2 small pancakes or 1 large)
1 Egg
1/4 Cup Unsweetened Goode Health Superfood Blend
1 Tbsp ground Flax Seed
1 Banana
1 Tbsp plant-based milk (slowly add more if batter is too dry to mix)
1/4 Cup Oats
1 tsp Cinnamon
1/4 Cup Blueberies
1½ tsp Avocado Oil
2 Tbsp Maple Syrup

- In a mixing bowl or blender, mix the egg, Goode Health powder, ground flax seed, banana, plant-based milk, cinnamon and oats.
- Stir blueberries into the batter.
- Heat the oil in a frying pan over medium-low heat. Pour in batter and cook pancakes until they're firm enough to flip, about 2 minutes per side.
- Serve topped with blueberries, maple syrup and sprinkle with cinnamon.
